Raw Vegan Stuffed Red Bell Peppers

I came up with this recipe yesterday, and I was quite happy with it. It's simple and, paired with Gena's awesome massaged kale salad, it makes a really nice filling lunch. Give it a try! :)

Raw vegan stuffed red bell peppers:

-1 red bell pepper, seeded and cut in half
-1 avocado, diced
-6 Tbsp taco "meat" (see previous post for the recipe)
-1 green onion, finely chopped
-salt, pepper, and lemon juice to taste

Now you have two options: You can mix up the avocado, taco meat, and green onion, and stuff it into the bell pepper. Or you can assemble it in layers (one layer of avocado, one layer of taco meat, etc.) It's up to you!

This is a great recipe to experiment with. I'm sure there are many other yummy fillings you can stuff into the bell pepper, so have fun playing around with it! :)
